Shrimp scampi pasta

Celebrate World Pasta Day with this delicious recipe

You can't go wrong with a good home-cooked pasta dish and Aiman has delivered a fishy delight in the form of their shrimp scampi pasta recipe:

Ingredients (serves 3)

  • 350g linguine
  • 250g shrimp (I used prawns)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves of minced garlic
  • 1/2 shallot
  • Salt and pepper
  • 2 tbsp of chopped parsley
  • Lemon juice
  • Chili flakes
  • Dry mint
  • Dry basil 
  • Paprika
  • Oregano 

Method

  1. Pre-cook 350g of linguine in boiling water according to package instructions.
  2. To a hot pan, add olive oil and 250g of shrimp and season with salt, pepper, chili flakes, and paprika.
  3. When the shrimp is ready, set is aside.
  4. To the same pan, add the 3 cloves of minced garlic and half a shallot diced.
  5. Sauté until the shallots caramelise/ turn brown, then add pasta water to the pan with 1 tbsp of butter and chopped parsley. Stir to emulsify the sauce.
  6. Add the cooked linguine and stir it in with the sauce, adding more pasta water according to preference.
  7. Re-add the cooked shrimp and plate up!
