Shrimp scampi pasta

Celebrate World Pasta Day with this delicious recipe
You can't go wrong with a good home-cooked pasta dish and Aiman has delivered a fishy delight in the form of their shrimp scampi pasta recipe:
Ingredients (serves 3)
- 350g linguine
- 250g shrimp (I used prawns)
- 2 tbsp olive oil
- 2 tbsp butter
- 3 cloves of minced garlic
- 1/2 shallot
- Salt and pepper
- 2 tbsp of chopped parsley
- Lemon juice
- Chili flakes
- Dry mint
- Dry basil
- Paprika
- Oregano
Method
- Pre-cook 350g of linguine in boiling water according to package instructions.
- To a hot pan, add olive oil and 250g of shrimp and season with salt, pepper, chili flakes, and paprika.
- When the shrimp is ready, set is aside.
- To the same pan, add the 3 cloves of minced garlic and half a shallot diced.
- Sauté until the shallots caramelise/ turn brown, then add pasta water to the pan with 1 tbsp of butter and chopped parsley. Stir to emulsify the sauce.
- Add the cooked linguine and stir it in with the sauce, adding more pasta water according to preference.
- Re-add the cooked shrimp and plate up!
