Creamy mushroom pasta with chicken strips

You can't go wrong with a good home-cooked pasta dish and Romaisa has shared her version of a classic creamy mushroom pasta (with chicken strips AND garlic bread):
Ingredients
- 1 tbsp butter
- 150g mushrooms, sliced
- 1 tbsp all-purpose flour
- 1 cup (240ml) milk
- ½ cup (120ml) boiling water
- 200g fresh egg noodles (or pasta of your choice)
- ½ tsp salt (adjust to taste)
- ¼ tsp white pepper
- ¼ tsp chilli flakes
- ½ tsp dried oregano
- ¼ tsp black pepper
- ¼ cup (60ml) heavy cream
- 1 cup fresh spinach (optional)
- ¼ cup grated cheese (cheddar or mozzarella)
- Parsley for garnish
- For the sides: 6 Asda peri peri chicken strips & 3 slices Asda garlic bread
Method
1. Prepare the chicken strips and garlic bread:
- Preheat your oven to 180°C (350°F).
- Place the Asda peri peri chicken strips and garlic bread on a baking tray. Bake for 10-15 minutes or until the chicken is crispy and cooked through, and the garlic bread is golden and crispy.
2. Cook the mushrooms:
- In a large pan, melt 1 tbsp of butter over medium heat. Add the sliced mushrooms and sauté until they are soft and golden, about 5-7 minutes.
3. Make the sauce:
- Sprinkle 1 tbsp of flour over the mushrooms and cook, stirring constantly, for 1-2 minutes to form a roux.
- Slowly whisk in the milk, ensuring there are no lumps.
- Add ½ cup of boiling water and continue whisking until the sauce thickens.
4. Cook the pasta:
- While the sauce is cooking, bring a large pot of salted water to a boil. Add the fresh egg noodles (or pasta of choice) and cook according to package instructions (4 minutes for fresh egg noodles). Drain and set aside.
5. Season the sauce:
- Add the salt, white pepper, chilli flakes, oregano, and black pepper to the sauce. Stir well.
- Pour in the heavy cream and give the sauce a good whisk until smooth.
6. Add spinach and cheese:
- If using spinach, add it to the sauce now, stirring until it wilts.
- Stir in the grated cheese until melted and incorporated into the sauce.
7. Combine the pasta and sauce:
- Add the cooked pasta to the sauce, tossing everything together until the pasta is well-coated.
8. Serve:
- Plate the creamy mushroom pasta, sprinkle grated Parsley on top for garnish.
- Serve with the baked peri peri chicken strips and garlic bread on the side.
