Spaghetti Carbonara recipe

Celebrate World Pasta Day with this delicious recipe

You can't go wrong with a good home-cooked pasta dish and Lily has shared her take on the Italian restaurant staple, carbonara:

Ingredients

  • 350g spaghetti
  • 3 eggs
  • Salt and pepper 
  • 100g pancetta
  • 50g grated pecorino
  • 2 garlic cloves
  • 50g unsalted butter

Method

  1. Boil a full kettle and add the hot water to a pot with a sprinkle of salt. Boil 350g of spaghetti for 15 minutes.
  2. Crack and beat 3 eggs, add black pepper to the mixture and set aside.
  3. Measure 100g of pancetta, add 25g of grated pecorino, and set aside.
  4. Peel and crush 2 garlic cloves using the flat side of a knife. 
  5. Add 50g of unsalted butter to a slightly warm pan.
  6. Once the butter has melted, add the cheese and pancetta, stirring occasionally. Then add the garlic. 
  7. Whilst the pancetta is cooking, add 25g of grated pecorino to the eggs and stir well. 
  8. Remove the garlic from the pan using a spoon and throw away.
  9. Add the cooked spaghetti to the pan.
  10. Remove the pan from the heat and immediately add the egg mixture into the pan and fold in, ensuring that the egg doesn't scramble. 
  11. Sprinkle any extra cheese and garnish with salt and pepper!
