The Fluffiest Pancake Recipe

Don't worry! Whether you're whipping up your pancakes solo or are making them with friends, we're sure these pancakes will be a hit with everyone!

Ingredients

  • 225g of all-purpose flour
  • 2 tablespoons of sugar
  • 2 teaspoons of baking powder
  • a sprinkle of salt
  • 240ml of milk
  • 1 large egg
  • 2 tablespoons of unsalted butter, melted
  • Soft butter to grease the pan, spread with kitchen roll
  • 1 teaspoon vanilla extract (optional)

Side Note: The best part is that once you buy the ingredients needed for this recipe, you can make it more than once! Or use the ingredients for other recipes since they are very commonly used.

Method

  1. In a large mixing bowl, whisk together the flour, sugar, baking powder, and salt.
  2. In a separate bowl, beat together the milk, egg, melted butter, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and gently stir until just combined. Do not overmix; a few small lumps are okay.
  4. Heat a non-stick pan or griddle over medium heat. Grease the pan with cooking spray or a small amount of melted butter.
  5. Pour about 2 table spoons of batter for each pancake.
  6. Cook until small bubbles form on the surface of the pancake, then flip and cook until the other side is golden brown, about 2-3 minutes per side.
  7. Repeat with the remaining batter, greasing the pan as needed.

Serve the pancakes warm with maple syrup, honey, or icing sugar with lemon juice (my personal favourite!) as well as fresh fruit or walnuts.

Extra Tips

  • If the batter is too thick, you can add a little extra milk to thin it out.
  • If the batter is too thin, you can add a little extra flour to thicken it up.
  • For extra fluffy pancakes, add an extra teaspoon of baking powder and let the batter rest for about 5 minutes before cooking.
  • For perfectly rounded pancakes, make one pancake at a time and use a small-medium pan.
